Tomatillo Rice
Ingredients (Serves 8)
This a good alternative for the popular red Mexican rice. Unlike tomatoes, tomatillos flavor is more sour hence giving this dish a very different and distinctive flavor.
Ingredients
4 tomatillos, chopped about 1/2 cup
2 tablespoons chopped cilantro
3 1/2 c. chicken stock
2 cups long grain rice
1/2 medium onion, diced
4 green onions, diced
1 clove garlic, minced
1 teaspoon salt
3 tablespoons olive oil
Preparation
1. Using food processor puree the tomatillos, onion, cilantro, and olive oil in 1 cup of chicken stock. In a large pan, combine the puree with the rice, scallions, garlic, salt, and remaining stock. Bring to a boil and stir once with a fork. Lower heat, cover and simmer for 18 minutes or until liquid is absorbed.
